On Memorial Day weekend, we enjoyed a visit from my husband’s parents. My brother- and sister-in-law also came over, so we had a total of 9 at our house for meals. It’s always a challenge to create a dessert that everyone can enjoy, but when three of the adults were avoiding sugar it was nearly impossible to find something that everyone in my house will all eat.
All of our guests (kids included) love fruit, so we tried to come up with something that would incorporate nature’s goodness but still look dessert-ish. Yes, that’s a word in my world. My father-in-law suggested making a watermelon cake. I mean, using the actual watermelon as the cake base. So here’s what I came up with.
You only need 4 ingredients for this dessert. Since the icing on the cake is one of the best parts, I didn’t want to eliminate that. Reddi-wip has only 15 calories per serving, so even those who are watching sugar can partake in this dessert.
The first step in getting this cake going is purchasing your ingredients. Get your kids involved! Ask them to choose two types of berries. My kids got local strawberries and blueberries. They also helped me select the best watermelon. My father-in-law told my little girl to tap the side of the melon and listen for one that doesn’t sound too hollow. It worked like a charm because the melon we brought home was perfection!
We bought the biggest can of extra-creamy Reddi-wip we could find. This topping has sweetened cream yet only 1 gram of fat and 15 calories per serving. Hooray!
You’ll want to consider your timing when preparing this dessert. If you plan to serve it immediately, you can probably swing making it just before you eat your meal.
If you have any downtime in between your activity and dessert, plan to pop this in the freezer for at least an hour. Keep the can of Reddi-wip in your fridge until you’re ready to use it.
Prep your watermelon first. Gently wash the outside of the melon and dry it. Then cut off both ends. I bought a smaller seedless watermelon so we used all of it for this cake. I made each layer about six inches thick. If your watermelon is very large, or you only want thin layers, you could save part of it for later.
Next, cut an intact circle all around the sides of the rind. It’s okay if your circle isn’t perfect; the Reddi-wip will hide any mistakes you make!
Finally, pat the watermelon circle dry with a clean kitchen towel or paper towel.
The second layer requires just a bit more attention. I used the rind of the first layer to help me get the sizing right for the second layer. See? It’s an easy template.
Make sure you dry this layer very well, too, on top and bottom.
Now, add Reddi-wip to your first cake layer. If you wish, you can also add a single layer of berries! Have at it!
Top it off with the second layer. The whipped topping might squeeze out of the sides. No worries. You’ll hide it with more Reddi-wip.
Now, this is where you need to make a decision. Do you want to freeze this for a bit? Or are you serving immediately?
I chose to serve mine immediately. Mostly because there was a little 5-year old boy behind me saying, “Mmmm, that looks good, mama. Can I eat that?” I started to put the Reddi-wip to work all around the sides of the watermelon cake. It’s really important to hold the can at about a 45-degree angle when doing this.
I was so focused that I didn’t notice these sticky fingers until he had taken a few swipes. Because I rushed the process, the Reddi-wip slid off the sides of my cake when I served it. It still tasted delicious!
Now, add some of your berries to the top of your cake. This is a way to hide any sloppy areas that you made with the Reddi-wip.
We had at least half a can of Reddi-wip plus half of the berries leftover when I finished making this dessert. In total, I spent $9.99 on this Berry Watermelon Cake.
Everyone in my house can splurge without worrying about the calories or sugar intake! My wheat-intolerant friends and family can enjoy this as well. This will be a treat for many summer meals to come!

I didn’t know that Reddi-wip only has 15 calories per serving. I’m going to have to get me some of this! My daughters would have a blast making this.
